Fall fashion is well underway, and quite exciting, but it isn’t the only thing keeping us intact this season. I know you’re excited about wearing your fall attire but trade the scarf in for an apron and get let’s get cooking. Why? Because these Pumpkin Sugar Cookies will translate your love for fall fashion into a deep appreciation for all things pumpkin. Let’s start cooking!
Here’s what you need:
1/2 cups sugar
2 1/2 cups of flower
1/2 teaspoon baking soda
1/4 tsp salt
1/2 teaspoon Cinnamon
1/2 teaspoon Nutmeg
1/2 cup if softened butter
2 tsps vanilla extract
1 egg yolk
1/2 cup 100% pure pumpkin puree
It doesn’t end there…frost your cookies with a little somethin’
8 ounces of softened cream cheese
4 cups of powdered sugar
¼ cup of caramel
¼ teaspoon of salt

Step 1: Whisk together the flour, baking powder, salt, and cinnamon. Set them aside and then, with your mixer on mix together the butter and sugar until it takes a light and fluffy consistency.
Step 2: Thoroughly mix the egg yolk, vanilla, and then pumpkin respectively until well combined. And then slowly, but thoroughly, mix in the flour mixture.
Step 3: Preheat your oven to 350 degrees. In the meantime, refrigerate the cookie dough for 20 minutes.
Step 4: Roll the dough into small balls (roll in sugar) and then place on a parchment lined baking sheet.
Step 5: Bake for 10 minutes, rotating the pan halfway through the baking, let cool for 2 minutes after removing from the oven and before adding the frosting.
